St. Patrick’s day is nearly here. This year, some of us will find ourselves in a solitary state on this traditionally festive day. What else can you expect when half the world is living in a state of quarantine. The way it stands, more than a few of us will end up being alone on March 17th. However, this doesn’t mean we have to spend it sitting in a corner pondering what could have been. Let’s put on our party pants and find fun and engaging ways to make this year’s Irish-themed holiday extra special.

1. Start Off Your Day with Green Eggs and Ham for Breakfast

Unless you’re a short, annoyingly persistent, red hat-wearing little fellow by the name of Sam, you may not think of Green Eggs and Ham as a festive food. However, this meal based on the classic Dr. Suess book has all the makings of a great St. Patrick’s day breakfast. But make no mistake about it, the book may have been written for children but green eggs and ham can be the perfect breakfast for adults.

For this whimsical and delightful green-themed breakfast, you needn’t be a gourmet chef.  And you needn’t be a kid to love and enjoy this fun twist on the classic eggs and ham breakfast. This recipe, modified from delish.com, includes spinach and herbs, so it’s a touch more healthful than some of the food coloring using recipes used to fascinate children.

Just remember, it’s Green Eggs and Ham, not Green Eggs and Green Ham. If your ham is green, it’s old and should be thrown out. Definitely not something I’d recommend eating. Not even on a boat or with a goat.

INGREDIENTS

    • 2 tbsp. extra-virgin olive oil, divided
    • 1 c. packed baby spinach 
    • 2 large eggs
    • 1 tbsp. milk
    • 2 tbsp. freshly chopped basil
    • 1 tsp. freshly chopped parsley
    • 1 tsp. freshly chopped chives
    • 1/2 tsp. fresh thyme leaves
    • Kosher salt
    • Freshly ground black pepper
    • Pinch crushed red pepper flakes
    • 1 ham steak (or thick turkey ham slice)

DIRECTIONS

    1. Heat 1 tablespoon of oil over medium heat in a small nonstick skillet
    2. Add spinach and sauté until the spinach has wilted. 
    3. Combine eggs and milk in a medium bowl and whisk. 
    4. Add herbs, red pepper flakes, and spinach
    5. Add season salt and pepper. 
    6. Add 1/2 tablespoon of oil to skillet and heat over medium heat. 
    7. Add in egg mixture and reduce heat to medium-low. 
    8. Gently stir the mixture using a rubber spatula until just set. 
    9. Plate immediately.
    10. Heat a separate skillet to medium. 
    11. Add 1 tablespoon of oil. 
    12. Add ham and cook 3 to 5 minutes per side (until color turns golden). 
    13. Slice ham and serve with scrambled eggs.

We’re not saying you’ll love these eggs enough to eat them in a box, or with a fox. However, after making this delicious breakfast, we’re sure you’ll add this recipe to your go-to list of breakfast meals.

2. Spread Cheer with Holiday Themed Meeting Background Images

One way to put yourself in an Irish state of mind is by watching a classic Irish movie. Some of the classic favorites include Darby O’Gill and the Little People, The Quiet Man, and The Wind that Shakes the Barley. If you want a more recent movie, check out Brooklyn or Sing Street. Good Vibrations is a charming and fun movie based on a true story that will put you in a hopeful mood. The power of perseverance is at the core of this story. You’ll cry, laugh, and dance as you enjoy this nostalgic story about music, life, and pursuing your dreams. It’s free on Amazon Prime and is a great option if you’re a music lover.

One of the most enchanting movies you’ll ever see is P.S. I Love You. This amazing star-studded film is emotional and inspirational. In it, Hilary Swank portrays a widow who loses her husband and finds herself again because of messages left from her deceased husband. The entire story isn’t located in Ireland, but it has a couple of overseas trips and plenty of Irish characters to call it an Irish movie. I don’t want to give up too much, but I think you’ll be pleasantly surprised and inspired. P.S. I Love You is definitely on the list of the greatest Irish movies of all time!

There are lots of great options regardless of what genre of movie you prefer. Make yourself some popcorn, sit back, and start feeling more Irish as you enjoy a classic Irish movie.
